December's Recipe of the Month - Pork

Pork Spare Ribs with Barbecue Sauce

What a change this will be from turkey at the end of this month. The sauce is easy to make. The aroma whilst it is cooking is very mouth watering.

Serves 4.


  1. lb pork spare ribs.

      2 medium onions, finely chopped.

      4 x garlic cloves (crushed).

      Olive oil for frying.

      2 red chillies (finely chopped)

      2 tsp. fennel seeds (crushed)

      4 oz. dark brown sugar.

      1 pt. tomato ketchup.

      3 fl oz dark soy sauce.

      salt and pepper.


Preheat the oven to 200C, Gas mark 6. Place the spare ribs side by side in a roasting tin and roast for 25 minutes.

Fry the onions and garlic in a little olive oil with the chillies, fennel seeds and sugar.

When the onions are soft, stir in the soy sauce and ketchup. Add salt and pepper to taste.

Bring to the boil, then simmer for a few minutes to combine all the flavours. Cool.

Remove the ribs from the oven and brush well with the sauce, using half of it. Return to the oven and roast for 15 minutes.

Serve hot with the rest of the sauce in a jug.

You could eat the ribs with a Caesar Salad.
